Le mele al forno con crema pasticciera della Contessa di Castiglione

 

Dolci, deliziose, e tutto sommato non cosi’ caloriche come un dolce con la crema: le mele al forno con crema pasticciera pare fossero il dolce preferito della Contessa di Castiglione, dama molto inserita nella politica ottocentesca e di gusti fini.
Come che sia, il profumo che ne sprigiona e’ paradisiaco e di solito non ne avanza mai, per cui le segnerei nei must have.

INGREDIENTI (per 4 persone)

4 mele

300 ml di latte

1 tuorlo d’uovo

3 o 4 cucchiai di zucchero a velo

1 cucchiaio e mezzo di fecola

1 cucchiaino di rum

acqua, zucchero semolato

PROCEDIMENTO

  1. Sbucciate le mele
  2. Togliete ad ognuna il picciolo, scavandolo via a cono (come nella foto) e conservate il ‘cappellino’ di mela cosi’ ottenuto
  3. Scavate l’interno del frutto con una lama affilata, attorno al torsolo, in modo da eliminare la parte dura coi semi, facendo attenzione a non bucare il fondo (non si puo’ usare l’attrezzo cavatorsoli)
  4. Fate bollire acqua e zucchero e buttateci dentro le mele, facendole cuocere fin che siano morbide, ma non spappolate.
  5. Nel frattempo riscaldate il forno a 180 gradi e preparare velocemente la crema: mettere in un pentolino, a freddo,  il latte, il tuorlo, lo zucchero a velo, il rum e la fecola, e posizionare su fiamma bassa, mescolando con la frusta a mano fin che la mistura non si sia abbastanza addensata
  6. Posizionate le mele in una pirofila e riempire di crema  il cavo al centro di ognuna, in modo che debordi un po’ in cima,  e appoggiarvi sopra i  cappellini tenuti da parte (non e’ necessario averli fatti bollire in precedenza)
  7. Spolverate con zucchero a velo tutte le mele e infornare per alcuni minuti: la parte superiore delle mele dovrebbe dorare leggermente, ma senza bruciare.
  8. Consumate tiepide, o anche fredde, accompagnando con l’eventuale crema pasticcera avanzata nel pentolino
